Ingredients

  • 12 oz egg noodles
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 8 oz baby bella mushrooms, sliced
  • 2 cloves garlic, minced
  • 10.5 oz cream of mushroom soup
  • 1 cup sour cream
  • 0.5 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 2 tbsp parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

Step 2

Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes, breaking it into crumbles as it cooks. Drain any excess grease and transfer the beef to a bowl.

Step 4

In the same skillet, add the diced onion and sliced mushrooms. Cook for 5-6 minutes until softened, stirring occasionally. Add the minced garlic and cook for an additional 1 minute, until fragrant.

Step 5

Return the ground beef to the skillet. Stir in the cream of mushroom soup, sour cream, beef broth, Worcestershire sauce, paprika, salt, and black pepper. Mix well and let simmer for 2-3 minutes.

Step 6

Combine the cooked egg noodles with the beef mixture, stirring until evenly coated.

Step 7

Transfer the mixture to the prepared baking dish and spread it out evenly.

Step 8

Sprinkle the shredded cheddar cheese over the top of the casserole.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

Step 10

Remove from the oven and let the casserole sit for 5 minutes before serving. Garnish with chopped parsley, if desired.

Step 11

Serve warm and enjoy!
