  • 6 cups (sliced) yellow squash
  • 1 cup (chopped) onion

  • 2 large (beaten) eggs
  • 1 cup (crumbled) Ritz crackers
  • 2 tablespoons butter (melted)
  • 0.25 teaspoon paprika (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a large skillet, combine the sliced yellow squash, chopped onion, and water. Cook over medium heat for about 10 minutes, or until the squash is tender and the water has mostly evaporated.

Drain the squash and onion mixture well, pressing gently to remove excess liquid. Place the mixture into a large mixing bowl.
