Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound andouille sausage, sliced into 1/4-inch rounds
  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 3 units garlic cloves, minced
  • 1 14-ounce can canned diced tomatoes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 teaspoons cajun seasoning
  • 1 teaspoon paprika
  • 1 cup parmesan cheese, freshly grated
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Cook the penne pasta in a large pot of salted boiling water until al dente, following the package instructions. Drain and set aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add the sliced andouille sausage and cook until browned on both sides, about 3-4 minutes. Remove sausage from the skillet and set aside.

Step 3

In the same skillet, melt the butter. Add the diced onion and red bell pepper, cooking until softened, about 5 minutes.

Step 4

Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.

Step 5

Add the canned diced tomatoes (with their juices), chicken broth, heavy cream, cajun seasoning, and paprika. Stir well to combine.

Step 6

Bring the mixture to a gentle simmer and cook for 5 minutes, allowing the flavors to meld together.

Step 7

Return the sausage to the skillet, then add the shrimp. Cook for 3-4 minutes, or until the shrimp turn pink and are cooked through.

Step 8

Add the drained pasta to the skillet and gently toss to coat the pasta in the sauce.

Step 9

Stir in the grated parmesan cheese, allowing it to melt into the sauce. Season with salt and black pepper to taste.

Step 10

Garnish with freshly chopped parsley and serve hot.
