Ingredients

  • 1.5 cups long-grain white rice
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 3 tablespoons tomato paste
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 cup frozen peas
  • 1 small carrot, diced
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain well and set aside.

Step 2

Heat the vegetable oil in a large skillet or saucepan over medium heat.

Step 3

Add the rinsed rice to the skillet and sauté for 5-7 minutes, stirring frequently, until the rice is golden brown.

Step 4

Stir in the chopped onion and cook for 3 minutes, until softened and translucent.

Step 5

Add the minced garlic and cook for 30 seconds, until fragrant.

Step 6

In a separate bowl, combine the chicken broth, tomato paste, cumin powder, chili powder, and salt. Whisk until smooth.

Step 7

Pour the broth mixture into the skillet with the rice. Stir to combine.

Step 8

Stir in the diced carrot and bring the mixture to a simmer.

Step 9

Reduce the heat to low, cover the skillet with a tight-fitting lid, and let the rice cook for 18-20 minutes, or until the liquid is fully absorbed and the rice is tender.

Step 10

Add the frozen peas during the last 5 minutes of cooking and stir gently to incorporate.

Step 11

Once cooked, remove the skillet from the heat and let the rice rest, covered, for 5 minutes.

Step 12

Fluff the rice with a fork and garnish with chopped cilantro if desired before serving.
