Ingredients

  • 500 grams fresh green beans, trimmed and cut into 2-inch pieces
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 240 milliliters chicken or vegetable broth
  • 120 milliliters heavy cream
  • 200 grams mushrooms, finely chopped
  • 1 teaspoon soy sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 120 grams shredded cheddar cheese (optional)
  • 200 grams fried onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch for 4-5 minutes, or until tender-crisp. Drain and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.

Step 4

Sprinkle the flour over the onion mixture and stir well, cooking for 1-2 minutes to remove the raw flour taste.

Step 5

Slowly pour in the chicken or vegetable broth, whisking constantly to prevent lumps. Add the heavy cream, stir, and bring the mixture to a simmer.

Step 6

Stir in the mushrooms, soy sauce, salt, and black pepper. Cook for 5-7 minutes, or until the sauce has thickened and the mushrooms are tender.

Step 7

Remove the pan from the heat and, if desired, stir in half of the shredded cheddar cheese for extra creaminess.

Step 8

Combine the blanched green beans with the sauce, ensuring they are evenly coated. Pour the mixture into a 9x13-inch baking dish.

Step 9

Sprinkle the remaining shredded cheddar cheese (if using) evenly over the casserole. Top with a generous layer of fried onions.

Step 10

Bake the casserole in the preheated oven for 15-20 minutes, or until bubbly and golden brown on top.

Step 11

Remove from the oven and let the casserole cool for 5 minutes before serving.
