  • 1 packet Taco seasoning
  • 2/3 cup Water
  • 2 cups Red enchilada sauce
  • 12 pieces Corn tortillas
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 4-ounce can Diced green chilies
  • 1 as needed Cooking spray
  • 1 to taste Optional toppings (sour cream, chopped cilantro, diced tomatoes, sliced jalapeños)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray and set aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon as it cooks. Drain excess grease if necessary.

Add the taco seasoning and water to the skillet with the cooked beef. Stir well and let it simmer for 5 minutes. Remove from heat.

In a small mixing bowl, combine the red enchilada sauce and diced green chilies. Stir well to combine.
