Ingredients

  • 1 cup Unsalted butter, softened
  • 1.25 cups Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 1 large Egg
  • 0.25 cup Eggnog
  • 1 teaspoon Vanilla extract
  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1.5 teaspoons Ground nutmeg
  • 1 teaspoon Ground cinnamon
  • 0.25 cup Granulated sugar (for coating)
  • 0.5 teaspoons Ground nutmeg (for coating)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone mats.

Step 2

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes using a hand mixer or stand mixer on medium speed.

Step 3

Beat in the egg, eggnog, and vanilla extract until fully incorporated.

Step 4

In a separate medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground nutmeg, and ground cinnamon until evenly combined.

Step 5

Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined. Do not overmix.

Step 6

In a small bowl, prepare the coating by mixing the additional 1/4 cup of granulated sugar and 1/2 teaspoon of ground nutmeg.

Step 7

Using a tablespoon or small cookie scoop, portion out the dough and roll each piece into a ball. Roll the dough balls in the sugar-nutmeg coating until evenly coated.

Step 8

Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden and the centers appear slightly soft. Do not overbake.

Step 10

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve the cookies with a warm cup of eggnog or your favorite holiday beverage. Enjoy!
