Ingredients

  • 3 tablespoons Butter
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 4 cups Broccoli florets
  • 4 cups Chicken or vegetable stock
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 1 cup (optional, for serving) Shredded cheddar cheese

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes, until translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, being careful not to burn it.

Step 4

Add the broccoli florets and the chicken or vegetable stock to the pot. Bring the mixture to a boil.

Step 5

Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the broccoli is tender.

Step 6

Use an immersion blender to puree the soup directly in the pot, or carefully transfer the mixture to a blender in batches and blend until smooth. Return the soup to the pot if using a blender.

Step 7

Stir in the heavy cream, salt, pepper, and nutmeg. Allow the soup to heat through for 3-5 minutes, but do not let it boil.

Step 8

Taste and adjust seasoning as needed.

Step 9

Ladle the soup into bowls and top with shredded cheddar cheese if desired. Serve warm.
