Ingredients

  • 16 ounces button mushrooms (or cremini mushrooms)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 None shallots, finely minced
  • 3 None garlic cloves, minced
  • 0.25 cup brandy
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 tablespoon parsley, finely chopped, for garnish

Directions

Step 1

Clean the mushrooms by wiping them gently with a damp paper towel. If the mushrooms are large, slice them into halves or quarters for even cooking.

Step 2

In a large skillet, heat the unsalted butter and olive oil over medium heat until the butter is melted and begins to foam.

Step 3

Add the minced shallots to the skillet and sauté for 2-3 minutes, stirring frequently, until softened and fragrant.

Step 4

Stir in the minced garlic and cook for another 30 seconds, being careful not to burn it.

Step 5

Raise the heat to medium-high and add the cleaned mushrooms to the skillet. Stir well to coat them evenly with the butter and oil. Cook for 8-10 minutes, stirring occasionally, until the mushrooms become golden brown and release their liquid.

Step 6

Season the mushrooms with salt, freshly ground black pepper, and thyme leaves. Stir to mix the seasoning evenly.

Step 7

Deglaze the pan by carefully adding the brandy. Allow it to simmer for 1-2 minutes, letting the alcohol cook off while infusing the mushrooms with its rich flavor.

Step 8

Lower the heat to medium and continue to cook the mushrooms for another 3-5 minutes, stirring occasionally, until the liquid has reduced and formed a glossy sauce.

Step 9

Transfer the mushrooms to a serving dish, garnish with freshly chopped parsley, and serve warm alongside steak or your favorite main course.
