Ingredients

  • 1 head (medium-sized) Green cabbage
  • 0.5 head Red cabbage
  • 2 large Carrots
  • 3 stalks Green onions
  • 3 tablespoons Honey
  • 2 tablespoons Apple cider vinegar
  • 3 tablespoons Olive oil
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Sesame seeds
  • 2 tablespoons, chopped Fresh parsley (optional, for garnish)

Directions

Step 1

Remove the outer leaves of the green and red cabbage. Cut each cabbage in half, remove the core, and thinly slice the leaves into shreds. Alternatively, use a mandoline slicer for even slices.

Step 2

Peel and grate the carrots using a box grater or food processor. Set aside.

Step 3

Thinly slice the green onions, including the white and green parts.

Step 4

In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, and sliced green onions.

Step 5

In a separate small bowl, whisk together the honey, apple cider vinegar, olive oil, Dijon mustard, salt, and black pepper until the dressing is smooth and emulsified.

Step 6

Pour the honey dressing over the cabbage mixture. Using clean hands or salad tongs, toss everything together until the vegetables are evenly coated with the dressing.

Step 7

Toast the sesame seeds in a dry pan over medium heat for 2-3 minutes, stirring frequently, until they are golden brown and fragrant. Remove from heat and allow to cool.

Step 8

Sprinkle the toasted sesame seeds over the salad and toss lightly to distribute.

Step 9

If desired, garnish with freshly chopped parsley for extra color and flavor.

Step 10

Transfer the salad to a serving dish and let sit for 10-15 minutes to allow the flavors to meld together. Serve and enjoy!
