  • 4 tbsp Unsalted butter

  • 0.5 tsp Salt

Directions

Step 1

Rinse the spinach thoroughly under cold water to remove any dirt. Remove any tough stems, and roughly chop the leaves.

Bring a large pot of water to a boil. Add the spinach and blanch for 1-2 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop cooking.

Once cooled, drain the spinach again, squeezing out any excess moisture. Set aside.

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Stir in the flour and cook for 1-2 minutes, stirring constantly, to form a light roux.

Gradually whisk in the milk and heavy cream, making sure there are no lumps. Cook for 3-4 minutes, stirring, until the mixture thickens.
