Ingredients

  • 2 cups dried green split peas
  • 1 large yellow onion
  • 2 medium carrots
  • 2 celery stalks
  • 2 garlic cloves
  • 8 cups vegetable stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the split peas under cold water and check for any debris or stones. Set aside.

Step 2

Chop the onion, carrots, celery, and garlic finely.

Step 3

In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes, or until softened.

Step 4

Add the carrots, celery, and garlic. Sauté for another 5 minutes until the vegetables are tender.

Step 5

Stir in the dried thyme, oregano, and bay leaf, allowing the spices to bloom for about 1 minute.

Step 6

Add the rinsed split peas and vegetable stock to the pot. Stir to combine.

Step 7

Increase the heat to high, bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 75 to 90 minutes, stirring occasionally, or until the peas have broken down and the soup reaches your desired consistency.

Step 8

Remove the bay leaf and season the soup with salt and black pepper to taste.

Step 9

For a smoother texture, use an immersion blender to partially blend the soup, or serve as is for a chunkier version.

Step 10

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve warm and enjoy!
