Ingredients

  • 2 cups Russet potatoes (raw, grated, and drained)
  • 1 cup Mashed potatoes (leftover or freshly made)
  • 1 cup All-purpose flour
  • 0.5 cup Whole milk
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper (optional)
  • 2 tablespoons Butter
  • 2 tablespoons Neutral oil (e.g., canola or vegetable oil)

Directions

Step 1

Peel and grate the raw potatoes using a box grater. Place the grated potatoes in a cheesecloth or clean kitchen towel and squeeze out excess water. Transfer the grated potatoes to a large mixing bowl.

Step 2

Add the mashed potatoes to the bowl with the grated potatoes and mix to combine.

Step 3

In a separate bowl, whisk together the flour, baking powder, salt, and pepper (if using).

Step 4

Gradually add the dry ingredients to the potato mixture, mixing gently but thoroughly. Slowly pour in the milk, a little at a time, until a thick batter forms. The consistency should be similar to a thick pancake batter.

Step 5

Heat a large skillet or griddle over medium heat. Add 1 tablespoon of butter and 1 tablespoon of oil to the pan. Swirl to coat the surface evenly.

Step 6

Scoop about 1/4 cup of the boxty batter into the skillet for each pancake, flattening gently with the back of a spoon or spatula to form a round pancake about 1/4-inch thick.

Step 7

Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

Step 8

Repeat with the remaining batter, adding more butter and oil to the skillet between batches as necessary.

Step 9

Transfer the cooked boxty to a paper towel-lined plate to drain any excess oil. Serve warm with butter, sour cream, or your choice of topping.
