Ingredients

  • 4 cups Fresh spinach leaves
  • 1 cup Fresh basil leaves
  • 1 cup Walnuts
  • 0.5 cup Parmesan cheese, grated
  • 2 pieces Garlic cloves
  • 2 tablespoons Fresh lemon juice
  • 0.5 cup Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Wash the spinach and basil leaves thoroughly and pat them dry with a clean kitchen towel or paper towels.

Step 2

In a dry skillet over medium heat, lightly toast the walnuts for 2-3 minutes to bring out their flavor. Set aside to cool.

Step 3

In a food processor, combine the spinach leaves, basil leaves, toasted walnuts, grated Parmesan cheese, and garlic cloves.

Step 4

Pulse the mixture several times until the ingredients are coarsely chopped.

Step 5

Add the fresh lemon juice, salt, and ground black pepper to the food processor.

Step 6

With the food processor running, slowly drizzle in the olive oil through the feed tube until the mixture becomes smooth and creamy. You may stop and scrape down the sides of the bowl as needed.

Step 7

Taste the pesto and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.

Step 8

Transfer the pesto to a clean jar or container. If not using immediately, store it in the refrigerator with a thin layer of olive oil on top to prevent browning.
