Ingredients

  • 12 oz Elbow macaroni
  • 6 oz Pancetta, diced
  • 4 tbsp Unsalted butter
  • 3 tbsp All-purpose flour
  • 3 cups Whole milk
  • 2 cups Sharp cheddar cheese, shredded
  • 1 cup Gruyere cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika
  • 1 cup Panko breadcrumbs
  • 1 tbsp Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes. Remove the pancetta with a slotted spoon and set aside on a paper towel-lined plate. Reserve the rendered fat in the skillet.

In the same skillet, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes, stirring constantly, until the mixture is golden and smooth.
