Wash and pat dry the pattypan squash. Trim off the stems and cut each squash into quarters.
Dice the chorizo sausage into small bite-sized pieces.
Peel and finely slice the yellow onion. Mince the garlic cloves.
Heat the olive oil in a large skillet or sauté pan over medium heat.
Add the diced chorizo to the pan and cook for 4-5 minutes, stirring occasionally, until it releases its oil and starts to crisp up.
Remove the cooked chorizo with a slotted spoon and set aside, leaving the rendered oil in the pan.
Add the sliced onion to the pan and sauté for 5-7 minutes until softened and golden. Stir in the minced garlic, smoked paprika, and ground cumin, and cook for an additional 1 minute until fragrant.
Add the cherry tomatoes to the pan and cook for 3-4 minutes, pressing some of them gently with a spoon to release their juices.

Lower the heat to medium-low, cover the pan, and let the dish simmer for 20-25 minutes, stirring occasionally, until the squash is tender and the sauce has thickened.
