Ingredients

  • 1 pound Ground beef (80/20 blend)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 tablespoons Unsalted butter
  • 2 cups Yellow onion (thinly sliced)
  • 4 slices Swiss cheese (or Gouda, sliced)
  • 4 slices Rye bread
  • 1 tablespoon Olive oil

Directions

Step 1

In a mixing bowl, combine the ground beef with salt and black pepper. Divide into two equal portions, shaping them into oval-shaped patties to roughly match the shape of the bread. Set aside.

Step 2

Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium-low heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes until soft, golden brown, and caramelized. Remove from the skillet and set aside.

Step 3

In the same skillet, increase the heat to medium. Place the beef patties in the skillet and cook for 3-4 minutes per side, or until they are cooked to your desired level of doneness. Remove from the skillet and set aside.

Step 4

Clean the skillet lightly with a paper towel and return it to medium-low heat. Butter one side of each slice of rye bread with the remaining butter.

Step 5

Assemble the patty melts: Place one slice of bread buttered-side down in the skillet. Layer with one slice of Swiss cheese, a beef patty, caramelized onions, and another slice of Swiss cheese. Top with the second slice of bread, buttered-side up.

Step 6

Cook the sandwich for 2-3 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crisp, and the cheese is fully melted.

Step 7

Repeat with the second patty melt and serve immediately, sliced in half if desired.
