Ingredients

  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 2 large yellow onion
  • 8 slices rye or sourdough bread
  • 4 slices Swiss cheese
  • 4 slices cheddar cheese
  • 4 tablespoons mayonnaise
  • 1 tablespoon olive oil

Directions

Step 1

In a large mixing bowl, combine the ground beef with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Mix lightly, being careful not to overwork the meat.

Step 2

Divide the seasoned beef into 4 equal portions and shape them into thin patties slightly larger than the bread slices. Set aside.

Step 3

Peel and thinly slice the yellow onions. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until golden brown and caramelized, about 15 minutes. Season with a pinch of salt and set aside.
