  • 4 cups Napa cabbage

  • 1 cup Carrots

  • 0.5 cup Cilantro leaves
  • 1 cup Mandarin oranges (canned, drained)
  • 1 cup Crunchy chow mein noodles
  • 0.5 cup Sliced almonds
  • 1 tablespoon Sesame seeds
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 1 teaspoon Fresh ginger (grated)
  • 1 clove Garlic (minced)
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Salt

Directions

Step 1

Bring a medium pot of water to a boil and add a pinch of salt. Place the chicken breasts in the boiling water and simmer for 12-15 minutes, or until fully cooked (internal temperature of 165°F). Remove the chicken from the water and let it cool before shredding into bite-sized pieces.
