Ingredients

  • 2 bunches collard greens
  • 1 bunch mustard greens
  • 1 bunch kale
  • 1 piece smoked turkey leg
  • 1 large onion
  • 4 whole garlic cloves
  • 6 cups chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Thoroughly rinse the collard greens, mustard greens, and kale under cold water to remove any dirt or grit. Cut out the tough stems and chop the leaves into bite-sized pieces.

Step 2

Peel and finely dice the onion, and mince the garlic cloves. Set aside.

Step 3

In a large stockpot, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic, cooking for another minute until fragrant.

Step 4

Add the smoked turkey leg to the pot and pour in the chicken broth. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for 15 minutes to infuse the broth with smoky flavor.

Step 5

Stir in the chopped greens a handful at a time, allowing them to wilt slightly before adding more, until all the greens are in the pot.

Step 6

Add the apple cider vinegar, brown sugar, red pepper flakes, salt, and black pepper. Stir to combine.

Step 7

Cover the pot with a lid and simmer the greens over low heat for 60-75 minutes, stirring occasionally, until the greens are tender and flavorful.

Step 8

Remove the smoked turkey leg from the pot, shred the meat, and discard the bone. Return the shredded meat to the pot and stir to combine.

Step 9

Taste the greens and adjust seasoning if necessary. Serve hot as a comforting side dish.
