  • 3 cups Fresh spinach
  • 2 large Red bell peppers
  • 4 cups Vegetable broth

  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Nutmeg (optional)

Directions

Step 1

Peel and slice the carrots into rounds. Core and dice the red bell peppers into small chunks. Finely chop the yellow onion and garlic cloves.

Step 2

In a pot, heat 1 tablespoon of olive oil over medium heat. Add the carrots and sauté for 5 minutes. Pour in 1.5 cups of vegetable broth, cover, and simmer for 15 minutes until the carrots are soft. Blend the carrots using an immersion blender or stand blender until smooth. Stir in 1/3 cup of heavy cream and a pinch of nutmeg, if desired. Season with 1 teaspoon of salt and set aside.

Step 3

In another pot, heat 1 tablespoon of olive oil over medium heat. Add the diced red bell peppers and sauté for 5 minutes. Pour in 1.5 cups of vegetable broth, cover, and simmer for 15 minutes until the peppers are tender. Blend the mixture until smooth. Stir in 1/3 cup of heavy cream, season with 1 teaspoon of salt, and set aside.

Step 4

In a third pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic and sauté for 3-4 minutes, until softened. Add the fresh spinach and cook until wilted. Pour in 1 cup of vegetable broth, cover, and simmer for 5 minutes. Blend the mixture until smooth. Stir in the remaining heavy cream, the lemon juice, and 1 teaspoon of pepper. Set aside.

Step 5

To assemble the patterned soup, gently pour the purees one at a time into a serving bowl, aiming for sections or layers of differing colors. Use a spoon or skewer to create swirls or patterns by dragging gently through the layers of soup, being careful not to mix them fully.
