Ingredients

  • 12 ounces Linguini
  • 1 pound Large shrimp (peeled and deveined)
  • 3 tablespoons Olive oil
  • 4 units Garlic cloves (minced)
  • 1 teaspoon Crushed red pepper flakes
  • 0.5 cup White wine
  • 14 ounces Canned diced tomatoes (with juices)
  • 2 tablespoons Tomato paste
  • 0.5 cup Chicken or vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Fresh black pepper
  • 2 tablespoons Fresh parsley (chopped)
  • 2 tablespoons Fresh basil (chiffonade)
  • 0 Freshly grated Parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguini according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp to the skillet, season with a pinch of salt and pepper, and sauté for 2-3 minutes per side until pink and fully cooked. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté until fragrant, about 1 minute.
