Patra, a beloved Gujarati delicacy, is a flavorful combination of colocasia leaves rolled with spiced gram flour paste, steamed to perfection, and lightly pan-fried for a crisp finish. This traditional snack is a harmonious balance of sweet, tangy, and spicy flavors, thanks to the use of tamarind paste, jaggery, chili powder, and aromatic spices like garam masala. The sesame seeds add a delightful nuttiness, while a tempering of mustard seeds enhances the flavor further. These savory rolls are not only visually striking with their spiraled layers but also incredibly versatile—serve them as an appetizer, snack, or even a side dish. Whether you're exploring Indian vegetarian cuisine or looking for unique recipes with colocasia leaves, Patra is a must-try dish that’s as fun to make as it is to eat!

Wash the colocasia leaves thoroughly and pat them dry. Cut off their thick stem if necessary.
In a mixing bowl, combine gram flour, tamarind paste, jaggery, chili powder, turmeric powder, garam masala, sesame seeds, salt, and asafoetida.
Gradually add water to the mixture, stirring well to form a thick, smooth paste.
Place a leaf face down and apply a thin layer of the paste evenly on it. Layer another leaf on top, repeat the process for 3-4 leaves.
Once layered, fold the sides of the leaves towards the center and carefully roll them up tightly.
Repeat the process with the remaining leaves and paste.
Steam the rolls for about 20-25 minutes until cooked through and firm.
Allow the steamed rolls to cool slightly before slicing them into 1/2 inch thick pieces.
Heat oil in a pan, add mustard seeds and let them splutter.
Add the sliced patra pieces to the pan and fry lightly until they are slightly crispy.
Garnish with chopped coriander leaves before serving.
