Ingredients

  • 2 heads Romaine lettuce
  • 1.5 cups Cherry tomatoes
  • 1 large Cucumber

  • 5 small Radishes
  • 1 large Sweet bell pepper (any color)

  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Rinse and dry the romaine lettuce. Chop it into bite-sized pieces and place in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl.

Step 3

Peel the cucumber (optional) and slice it into thin rounds or half-moons. Add to the salad.

Step 4

Thinly slice the red onion and radishes, and dice the sweet bell pepper. Add all to the bowl.

Sprinkle the crumbled feta cheese over the salad ingredients.
