  • 2 tablespoons flat-leaf parsley

Directions

Step 1

Peel the potatoes and cut them into chunky wedges or large cubes. Set aside.

Finely dice the onion and mince the garlic cloves.

Heat the olive oil in a large, heavy-bottomed pot over medium heat.
