Ingredients

  • 1.5 kg Potatoes
  • 80 ml Olive oil
  • 1 whole Large onion
  • 3 whole Garlic cloves
  • 400 g Tomatoes (fresh or canned, diced)
  • 1 tbsp Tomato paste
  • 2 whole Bay leaves
  • 0.25 tsp Ground cinnamon
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 500 ml Warm water
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into large chunks (about 2-inch pieces). Set aside in a bowl of water to prevent browning.

Heat the olive oil in a large, deep pot over medium heat.

Step 3

Peel and finely chop the onion, and sauté it in the olive oil until it becomes translucent, about 5-7 minutes.

Mince the garlic cloves and add them to the pot. Stir for 1 minute until fragrant, being careful not to burn them.

Add the diced tomatoes and tomato paste to the pot. Stir well and cook for 3-4 minutes to combine the flavors.

Add the bay leaves, ground cinnamon, salt, and black pepper to the tomato mixture. Stir to distribute the spices evenly.

Drain the potatoes and add them to the pot. Stir gently to coat the potatoes in the tomato mixture.
