Ingredients

  • 600 g Potatoes
  • 400 g Tomatoes
  • 1 medium Red onion
  • 2 whole Garlic cloves
  • 4 tbsp Extra virgin olive oil
  • 3 tbsp Breadcrumbs
  • 2 Fresh rosemary sprigs
  • 3 Fresh thyme sprigs
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Peel the potatoes and slice them into thin rounds about 3-4 mm thick. Rinse them in cold water to remove excess starch, then pat them dry with a clean kitchen towel.

Step 3

Wash the tomatoes and slice them into thin rounds of similar thickness to the potatoes.

Step 4

Peel and thinly slice the red onion. Mince the garlic cloves.

Step 5

Grease a large baking dish with 1 tablespoon of olive oil. Layer the potato slices on the bottom, slightly overlapping them like shingles.

Step 6

Add a layer of tomato slices on top of the potatoes, sprinkling some of the sliced red onion and minced garlic over them.

Step 7

Repeat the layering process until all the potatoes, tomatoes, onion, and garlic are used up, finishing with a layer of tomatoes on top.

Step 8

Drizzle the remaining 3 tablespoons of olive oil evenly over the dish. Sprinkle the breadcrumbs on top for a crispy finish.

Add the fresh rosemary and thyme sprigs over the top. Season generously with salt and black pepper.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

After 30 minutes, remove the foil and continue baking for another 15 minutes, or until the potatoes are tender and the top is golden and slightly crispy.

Step 12

Remove the dish from the oven and let it cool for 5 minutes before serving. Garnish with additional fresh herbs if desired.
