Ingredients

  • 500 g Potatoes
  • 1 large Yellow onion
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 3 Garlic cloves
  • 2 medium Tomatoes
  • 60 ml Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Sweet paprika
  • 2 tbsp Fresh parsley

Directions

Step 1

Peel the potatoes and cut them into medium-sized cubes, approximately 2-3 cm wide.

Step 2

Thinly slice the onion and garlic cloves. Remove the seeds and core from the red and green bell peppers and slice them into thin strips.

Step 3

Blanch the tomatoes by scoring an 'X' on their bottoms, boiling them for 30 seconds, then transferring them to ice water. Once cool, peel off the skin, dice the tomatoes, and set them aside.

Heat the olive oil in a large skillet or frying pan over medium heat.

Add the sliced onions and garlic to the pan. Sauté for 2-3 minutes until fragrant and slightly translucent.
