Ingredients

  • 4 medium-sized Russet potatoes
  • 1 teaspoon Salt
  • 500 milliliters Olive oil
  • 1 cup Tomato sauce
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper
  • 2 cloves Garlic
  • 1 tablespoon White wine vinegar
  • 1 teaspoon Sugar
  • 1 tablespoon Fresh parsley

Directions

Step 1

Peel and cut the potatoes into bite-sized cubes, approximately 1 to 1.5 inches.

Step 2

Place the potatoes in a pot of cold water with 1 teaspoon of salt. Bring to a boil over medium-high heat.

Step 3

Once boiling, reduce to a simmer and cook for about 5 minutes until the potatoes are slightly tender. Drain and pat dry with a clean kitchen towel.

Heat the olive oil in a large deep pan over medium-high heat to approximately 340°F (170°C).

Fry the potatoes in batches, being careful not to overcrowd the pan, for about 8-10 minutes or until golden brown and crispy.

Remove the potatoes with a slotted spoon and drain on a paper towel-lined plate. Sprinkle with a little salt while still hot.

For the bravas sauce, finely mince the garlic cloves.

In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Stir in the tomato sauce, smoked paprika, cayenne pepper, white wine vinegar, and sugar. Simmer for 5-7 minutes, stirring occasionally, until the sauce slightly thickens.

Adjust seasoning to taste and remove the sauce from heat.

To serve, arrange the fried potatoes on a platter and spoon the warm bravas sauce over them.
