Ingredients

  • 600 grams Potatoes
  • 1 large Onion
  • 3 units Garlic cloves
  • 100 milliliters Extra virgin olive oil
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Peel the potatoes and slice them into thin, round slices about 3-4 millimeters thick. Rinse them under cold water to remove excess starch and pat them dry with a kitchen towel.

Step 2

Peel the onion and slice it into thin half-moons. Peel and finely slice the garlic cloves.

Step 3

Heat the olive oil in a large non-stick skillet or shallow frying pan over medium heat.

Step 4

Carefully add the potato slices and onion to the pan. Stir to coat them evenly in the olive oil.

Step 5

Season the potatoes and onions with salt and black pepper, then reduce the heat to low. Cover the pan with a lid and allow the potatoes and onions to cook for 25-30 minutes, stirring gently every 5-7 minutes to ensure even cooking and prevent sticking.

Step 6

After 30 minutes, add the sliced garlic to the pan and cook for an additional 5 minutes, stirring carefully. The potatoes should be tender and lightly golden but not crispy.

Step 7

Remove the pan from the heat and transfer the contents to a serving dish using a slotted spoon to drain any excess oil.

Step 8

Sprinkle fresh parsley over the top of the potatoes and onions.

Step 9

Serve warm as a side dish or with crusty bread for a light meal. Enjoy!
