Ingredients

  • 3 large Green plantains
  • 2 cups Vegetable oil
  • 1 teaspoon Salt
  • 1 cup Water
  • 0.5 teaspoons Garlic Powder (optional)

Directions

Step 1

1. Peel the green plantains by cutting off the ends and slicing lengthwise along the ridges. Use your hands or a knife to carefully remove the thick peel.

Step 2

2. Slice each plantain into 1-inch thick rounds.

Step 3

3. Heat the vegetable oil in a large skillet or frying pan over medium heat until it reaches about 350°F (175°C). Test the oil by dropping in a small piece of plantain; it should sizzle immediately.

Step 4

4. Carefully add the plantain slices to the hot oil in a single layer, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side, or until they are lightly golden but not fully cooked.

Step 5

5. Remove the plantain slices from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Step 6

6. One by one, flatten the fried plantain slices using a tostonera (plantain press) or the bottom of a flat plate. They should be about 1/4 inch thick.

Step 7

7. In a small bowl, mix the water with the salt and garlic powder (if using). Quickly dip each flattened plantain slice into the saltwater mixture, then pat dry with paper towels to prevent splattering in the oil.

Step 8

8. Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes per side, or until they are crispy and golden brown.

Step 9

9. Remove the patacones with a slotted spoon and place them on a clean plate lined with paper towels. Sprinkle with extra salt if desired.

Step 10

10. Serve hot with a side of chimichurri, refried beans, guacamole, or your favorite dipping sauce. Enjoy your crispy Patacones Ticos!
