Peel the green plantains by cutting off both ends, slicing along the length of the skin, and carefully prying the peel away from the fruit.
Cut the plantains into 1-inch thick slices.
In a large skillet or heavy-bottomed pan, heat the vegetable oil over medium heat until it reaches about 350°F (175°C).
Add the plantain slices to the hot oil in batches, making sure not to overcrowd the pan.
Fry the plantains for 2-3 minutes on each side until they are golden yellow and slightly softened.
Remove the fried plantains from the oil and place them on a plate lined with paper towels to drain excess oil.
Using the bottom of a glass, a flat plate, or a tostonera (plantain press), gently flatten each fried plantain slice to about 1/4 inch thick.
If desired, mix water, salt, and crushed garlic (optional) in a small bowl to create a seasoned dipping solution. Quickly dip the flattened plantains into this mixture, letting any excess drip off.
Return the flattened plantains to the hot oil and fry them again for 2-3 minutes on each side until they are crispy and golden brown.
Remove the patacones and let them drain again on paper towels. Sprinkle with salt while still warm.
Serve immediately as a snack or side dish. They pair perfectly with guacamole, salsa, sour cream, or your favorite dipping sauce.
