Ingredients

  • 1 box Rice-A-Roni (chicken flavor)
  • 2 cups Water
  • 2 tablespoons Unsalted butter
  • 1 cup Mayonnaise
  • 1 cup Celery
  • 1 cup Red bell pepper
  • 0.5 cup Green onions
  • 1 cup Frozen peas
  • 0.5 cup Slivered almonds
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a medium-sized saucepan, melt the butter over medium heat.

Step 2

Add the Rice-A-Roni and its seasoning packet, stirring to coat the rice and vermicelli in the butter.

Step 3

Pour in the water, bring to a boil, then lower the heat to a simmer. Cover and cook for about 15 minutes, or until the liquid is absorbed and the rice is tender. Remove from heat and let it cool completely.

Step 4

While the Rice-A-Roni is cooling, chop the vegetables: dice the celery and red bell pepper, slice the green onions, and measure out the frozen peas (no need to thaw).

Step 5

In a large mixing bowl, combine the cooked and cooled Rice-A-Roni with the chopped vegetables, slivered almonds, and peas.

Step 6

In a small bowl, whisk together the mayonnaise, lemon juice, salt, and black pepper.

Step 7

Pour the dressing over the rice mixture and gently toss until everything is evenly coated.

Step 8

Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld.

Step 9

Serve chilled as a side dish or light meal.
