Ingredients

  • 4 pieces bone-in pork chops (1-inch thick)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 pieces garlic cloves (minced)
  • 2 sprigs fresh thyme (optional for garnish)

Directions

Step 1

Take the pork chops out of the refrigerator and let them sit at room temperature for 30 minutes before cooking.

Step 2

Pat the pork chops dry with paper towels to remove excess moisture.

Step 3

In a small bowl, mix the salt, black pepper, paprika, and garlic powder together to create the spice rub.

Step 4

Rub the spice mixture evenly over both sides of the pork chops.

Step 5

Heat a large skillet over medium-high heat and add the olive oil.

Step 6

Once the oil is shimmering, carefully place the pork chops in the skillet. Sear for 3-4 minutes on each side until golden brown.

Step 7

Reduce the heat to medium and add the butter to the skillet. Allow it to melt, then add the minced garlic.

Step 8

Tilt the skillet slightly to pool the butter and garlic mixture, and use a spoon to continuously baste the pork chops with the butter for 3-4 minutes.

Step 9

Check the internal temperature of the pork chops using a meat thermometer. It should reach 145°F (63°C). If not, continue cooking and basting until it does.

Step 10

Remove the pork chops from the skillet and let them rest on a plate for 5 minutes. This helps retain the juices.

Step 11

Garnish with fresh thyme (if using) and serve immediately. Enjoy your flavorful Pat’s Pork Chops!
