Ingredients

  • 1 lb Fresh salmon fillet (skinless)
  • 1 cup Breadcrumbs (panko preferred)
  • 2 large Eggs
  • 3 tbsp Mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp Fresh parsley (chopped)
  • 1 Lemon (zested and juiced)
  • 2 cloves Garlic (minced)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika
  • 2 tbsp Olive oil (for frying)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Place the salmon fillet on the prepared baking sheet. Sprinkle lightly with salt and pepper, then bake for 12-15 minutes, or until the salmon is fully cooked through and flaky. Let it cool slightly.

Step 3

Flake the cooked salmon into a large mixing bowl, breaking it into small pieces using a fork.

Step 4

Add the breadcrumbs, eggs, mayonnaise, Dijon mustard, chopped parsley, lemon zest, lemon juice, minced garlic, salt, black pepper, and paprika to the bowl with the salmon. Mix gently until well combined.

Step 5

Shape the salmon mixture into 8 equal-sized patties, about 3 inches in diameter. Place the formed cakes on a clean plate or tray.

Step 6

Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the salmon cakes in batches, being careful not to overcrowd the pan.

Step 7

Fry each cake for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 8

Serve the salmon cakes warm, garnished with additional parsley and a wedge of lemon if desired. They pair well with a side of aioli, tartar sauce, or a simple green salad.
