  • 0.5 cups Brown sugar, packed
  • 0.5 cups Vegetable oil
  • 1 teaspoons Vanilla extract
  • 2 Large eggs
  • 0.75 cups Unsweetened applesauce
  • 1 cup Carrot, grated
  • 1 cup Zucchini, grated
  • 0.5 cups Chopped walnuts or pecans
  • 0.5 cups Raisins

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease the cups with nonstick spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.

Step 3

In a separate medium bowl, combine the granulated sugar, brown sugar, vegetable oil, vanilla extract, and eggs. Whisk until smooth.

Stir the applesauce into the wet mixture until combined.
