Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 large Egg
  • 1 cup Buttermilk
  • 0.5 cup Unsalted butter (melted)
  • 2 teaspoons Vanilla extract
  • 2 cups Chopped fresh rhubarb
  • 1 cup Chopped dates
  • 0.5 cup Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or cake pan.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.

Step 3

In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the cake dense.

Step 5

Gently fold the chopped rhubarb and chopped dates into the batter until evenly distributed.

Step 6

Pour the batter into the prepared baking dish and spread it out evenly with a spatula.

Step 7

In a small bowl, mix the brown sugar, ground cinnamon, and chopped pecans or walnuts (if using) for the topping.

Step 8

Sprinkle the topping mixture evenly over the cake batter.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Allow the cake to cool in the pan on a wire rack for at least 15 minutes before slicing and serving.

Step 11

Enjoy warm or at room temperature as is, or with a dollop of whipped cream or a scoop of vanilla ice cream!
