  • 2.5 pounds beef chuck roast
  • 1 large yellow onion
  • 4 garlic cloves
  • 3 medium carrots
  • 3 celery stalks
  • 4 medium potatoes
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper

Directions

Step 1

Preheat your oven to 325°F (162°C).

Step 2

Pat the beef chuck roast dry with paper towels and season it generously with 1 teaspoon of salt and 1 teaspoon of black pepper on all sides.

In a large oven-safe skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the beef roast on all sides until browned, about 3-4 minutes per side. Remove the beef and set it aside.

Peel and dice the onion. Mince the garlic cloves. Peel and cut the carrots into 1-inch chunks. Slice the celery stalks into 1-inch pieces. Wash and quarter the potatoes.
