Ingredients

  • 3 pieces Garlic cloves
  • 2 pieces Egg yolks
  • 2 tablespoons Lemon juice
  • 1 cup Olive oil
  • 0.5 teaspoons Salt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Water

Directions

Step 1

Peel the garlic cloves and mince them finely. If you prefer a smoother aioli, use a garlic press or mash them into a paste using the flat side of a knife and a pinch of salt.

Step 2

In a medium-sized bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and water until well combined and slightly frothy.

Step 3

Place the bowl on a damp cloth or towel to steady it while whisking.

Step 4

Slowly drizzle in the olive oil, just a few drops at a time, while whisking constantly to create an emulsion. Once the mixture begins to thicken, you can add the oil in a thin, steady stream while continuing to whisk vigorously.

Step 5

After all the olive oil has been added, whisk in the minced or mashed garlic and salt. Taste and adjust seasoning with additional salt or lemon juice if needed.

Step 6

If the aioli is too thick, you can whisk in a small amount of water, one teaspoon at a time, until desired consistency is reached.

Step 7

Transfer the aioli to a serving dish or airtight container. Refrigerate for at least 20 minutes before using to allow the flavors to meld.

Step 8

Serve as a dip, spread, or alongside grilled vegetables, seafood, or sandwiches. Store in the refrigerator for up to 3 days.
