  • 0.5 cup Granulated sugar
  • 4 large Egg yolks
  • 0.25 cup Cornstarch
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 0.125 teaspoon Salt

Directions

Step 1

In a medium saucepan, heat the milk over medium heat until it just begins to steam. Do not let it boil.

In a mixing bowl, whisk together the granulated sugar, egg yolks, cornstarch, and salt until smooth and pale in color.

Slowly pour about 1/2 cup of the heated milk into the egg mixture while whisking constantly to temper the eggs.

Gradually pour the tempered egg mixture back into the saucepan with the remaining hot milk, whisking constantly.

Cook over medium heat, stirring continuously with a whisk or a wooden spoon, until the mixture thickens and comes to a gentle boil. This should take about 2 to 3 minutes.

Once thickened, remove the saucepan from the heat and whisk in the butter and vanilla extract until fully incorporated.

Pour the pastry cream into a clean bowl and cover the surface directly with plastic wrap to prevent a skin from forming.
