  • 16 oz Orange juice
  • 8 oz Pineapple juice
  • 0.25 cup Brown sugar
  • 3 Cinnamon sticks
  • 8 Whole cloves
  • 2 Star anise
  • 1 Lemon
  • 1 Orange
  • 0.25 tsp Ground nutmeg
  • 2 oz per serving Optional: dark rum or bourbon

Directions

Step 1

In a large pot over medium heat, combine the apple cider, orange juice, and pineapple juice.

Step 2

Stir in the brown sugar until fully dissolved.

Step 3

Add the cinnamon sticks, whole cloves, and star anise to the pot.

Step 4

Slice the lemon and orange into thin rounds, removing any seeds, and add the slices to the pot.

Step 5

Sprinkle in the ground nutmeg and stir to combine.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low and simmer uncovered for 1 hour, allowing the spices and fruits to infuse into the liquid.

Step 7

Taste occasionally during the simmering process and adjust sweetness if needed by adding more brown sugar to taste.

Step 8

Strain the wassail through a fine mesh sieve into a heatproof serving bowl or pitcher to remove the spices and fruit solids.

Step 9

Serve hot in mugs. If desired, add 2 oz of dark rum or bourbon to each serving for an adult version.
