Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 0.75 cup pastina (tiny pasta)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery to the pot. Sauté for 5–7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Pour in the chicken broth and bring the mixture to a gentle boil.

Step 5

Add the shredded or diced cooked chicken, salt, and black pepper. Reduce the heat to low and let the soup simmer for 10 minutes.

Step 6

Stir in the pastina pasta and cook for 6–8 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.

Step 7

Taste and adjust the seasoning, adding more salt or pepper if needed.

Step 8

Remove the pot from the heat and stir in the fresh chopped parsley.

Step 9

Ladle the soup into bowls and garnish with grated Parmesan cheese, if desired. Serve hot and enjoy!
