Ingredients

  • 6 medium Russet potatoes
  • 1 lb Ground beef
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 2 tbsp Tomato paste
  • 1 tsp Paprika
  • 1 tsp Ground cumin
  • 0.5 tsp Dried oregano
  • 0.5 cup Chicken or beef broth
  • 4 tbsp Butter
  • 0.5 cup Whole milk
  • 1.5 tsp, divided Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 large Egg
  • 0.25 cup, grated Parmesan cheese
  • 2 tbsp, for garnish Optional: chopped parsley

Directions

Step 1

Peel and cut the potatoes into chunks. Place them in a large pot and cover with cold water. Add 1 tsp of salt and bring the water to a boil. Reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 2

While the potatoes cook, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 2-3 minutes, until softened. Add the minced garlic and cook for another 30 seconds.

Step 3

Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess fat if necessary.

Step 4

Stir in the tomato paste, paprika, cumin, oregano, 0.5 tsp of salt, and black pepper. Mix well to combine. Add the broth and simmer for 5-7 minutes until the mixture thickens slightly. Remove from heat and set aside.

Step 5

Drain the cooked potatoes and return them to the pot. Add the butter, milk, and 0.5 tsp of salt. Mash the potatoes until smooth and creamy.

Step 6

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish or similar size with a little butter or oil.

Step 7

Spread half of the mashed potatoes evenly on the bottom of the baking dish. Layer the seasoned ground beef mixture on top. Finish with the remaining mashed potatoes, spreading them evenly to cover the beef.

Step 8

In a small bowl, beat the egg and brush it over the top layer of mashed potatoes. Sprinkle the grated Parmesan cheese evenly over the top.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden and slightly crispy.

Step 10

Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley if desired.
