Ingredients

  • 1 package puff pastry
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 6 egg yolks
  • 1 teaspoon cinnamon
  • 1 strip lemon peel

Directions

Step 1

Preheat your oven to 400°F (200°C) and lightly grease a standard 12-cup muffin tin.

Step 2

Roll out the puff pastry on a floured surface to smooth out any creases. Cut the pastry into 12 even squares, and press one square into each muffin cup, ensuring the pastry comes up the sides of each cup.

Step 3

In a medium saucepan, combine the heavy cream, milk, sugar, flour, and lemon peel. Heat the mixture over medium heat, whisking continuously until it begins to simmer and thicken. Do not let it boil.

Remove the saucepan from the heat and discard the lemon peel. Stir in the vanilla extract, and allow the mixture to cool slightly.

Whisk the egg yolks in a bowl until smooth, then gradually whisk them into the cooled cream mixture until well combined and smooth.
