Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 4 tablespoons vegetable oil
  • 2 tablespoons cachaça or white vinegar
  • 1 cup warm water
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 0.25 cup green olives, chopped
  • 2 tablespoons parsley, chopped
  • 4 cups vegetable oil (for frying)
  • 1 teaspoon salt (for seasoning filling)
  • 0.5 teaspoon black pepper (for seasoning filling)

Directions

Step 1

In a large bowl, combine the flour and salt. Mix well.

Step 2

Add vegetable oil and cachaça or vinegar to the flour mixture. Gradually add the warm water while mixing until a dough forms.

Step 3

Knead the dough on a lightly floured surface until it is smooth and elastic, about 5-7 minutes. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Step 4

In the meantime, prepare the filling: In a skillet over medium heat, add a small amount of oil and sauté the onions until translucent.

Step 5

Add minced garlic to the skillet and sauté for another minute until fragrant.

Step 6

Add ground beef to the skillet, cooking until it is browned and fully cooked, breaking up any lumps with a spoon.

Step 7

Stir in tomato paste, olives, parsley, salt, and black pepper. Cook for another 5-7 minutes, allowing the flavors to blend. Remove from heat and let the filling cool completely.

Step 8

Roll out the rested dough on a floured surface to about 1/8 inch thickness. Cut the dough into squares or rectangles, about 4 inches in size.

Step 9

Place about 1-2 tablespoons of the filling in the center of each cut dough piece.

Step 10

Fold the dough over to create a filled rectangle or square and press the edges firmly with a fork to seal.

Step 11

In a deep, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Fry the pastel in batches, ensuring they are golden brown and crisp on both sides, about 2-3 minutes per side.

Step 12

Remove from oil and drain on paper towels. Serve hot, and enjoy your homemade pastel!
