Ingredients

  • 300 g Pasta (fettuccine or linguine)
  • 2 medium Zucchini
  • 10 leaves Fresh basil leaves
  • 200 ml Heavy cream
  • 50 g Grated Parmesan cheese
  • 2 cloves Garlic cloves
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 3 liters Water

Directions

Step 1

Fill a large pot with 3 liters of water and bring to a boil. Add a generous pinch of salt.

While the water heats, wash the zucchini and slice them thinly into half-moons.

Peel and finely mince the garlic cloves.

Step 4

Once the water boils, add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Add the zucchini slices to the skillet, season with salt and black pepper, and sauté for 5-6 minutes until tender and slightly golden.
