Ingredients

  • 12 oz Pasta (such as penne or spaghetti)
  • 2 medium Zucchini
  • 2 tbsp Olive oil
  • 2 cloves Garlic cloves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 4 oz Goat cheese (creamy)
  • 1 cup Pasta cooking water
  • 0.25 cup Fresh basil leaves
  • 2 tbsp Parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, wash and trim the ends of the zucchini. Slice the zucchini into thin half-moons.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Add the sliced zucchini to the skillet. Season with salt, black pepper, and crushed red pepper flakes (if using). Cook for 6-8 minutes, stirring occasionally, until the zucchini is tender and lightly golden.

Step 5

Reduce the heat to low. Add the goat cheese to the skillet and stir until it begins to melt, creating a creamy sauce.

Gradually add the reserved pasta cooking water, a few tablespoons at a time, until the sauce reaches your desired consistency.
