  • 12 oz pasta
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 large yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup vodka
  • 28 oz crushed tomatoes
  • 1 cup heavy cream
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup grated Parmesan cheese
  • 0.25 cup fresh basil, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet over medium heat, warm the olive oil and butter. Add the chopped onion and cook until soft and translucent, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute, stirring constantly to prevent burning.

Pour in the vodka and stir to combine. Let it simmer until the vodka has reduced by half, about 5-7 minutes.
