Ingredients

  • 12 oz spaghetti or pasta of choice
  • 2 cups ripe cherry tomatoes
  • 0.25 cup pine nuts
  • 0.25 cup extra-virgin olive oil
  • 0.5 cup fresh basil leaves
  • 2 units garlic cloves, minced
  • 0.33 cup grated Parmesan cheese
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water before draining, then set the pasta aside.

Step 2

While the pasta is cooking, prepare the uncooked sauce. Quarter the cherry tomatoes and place them in a large mixing bowl.

Step 3

Toast the pine nuts in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until golden and fragrant. Add them to the bowl with the tomatoes.

Step 4

Add the extra-virgin olive oil, minced garlic, chopped basil leaves, salt, black pepper, and red pepper flakes to the bowl. Stir gently to combine, allowing the flavors to meld together.

Step 5

Toss the warm, drained pasta with the uncooked tomato sauce mixture. If the sauce feels too dry, add a few tablespoons of the reserved pasta cooking water until the desired consistency is achieved.

Step 6

Sprinkle the freshly grated Parmesan cheese over the pasta and toss again to combine.

Step 7

Serve immediately, garnished with additional basil leaves and Parmesan cheese if desired.
