Ingredients

  • 12 oz pasta (penne or fusilli)
  • 4 links turkey sausage (sweet or spicy)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 cups cherry or grape tomatoes, halved
  • 0.5 tsp crushed red pepper flakes (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8 oz fresh mozzarella, cubed
  • 0.25 cup fresh basil leaves, chopped
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Remove the casings from the turkey sausage and crumble the meat into the skillet. Cook for 6-8 minutes, stirring occasionally, until browned and cooked through. Transfer the sausage to a plate and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
